Ala George - Broiled and topped with garlic, shallots, grated parmesan cheese, horseradish, mayonnaise, and crumbled garlic croutons.

Ala Orange - Lightly dusted in seasoned cracker meal, pan sautéed with white wine, butter, and topped an Orange Brandy Sauce.

Almondine - Lightly dusted in seasoned cracker meal, pan sautéed with white wine, butter, and topped with sliced roasted almonds.
